4) Oh, good call. I've tried some of the Serrano from Surry at Fairway I think. Man, I'd give up chocolate and sweets before cured pork.

While on the subject of mail order meats, if you like prosciutto and Serrano, you should all check out Surry Farms Surryano ham. It's from Virginia and worth every penny. We're on our second bone-in whole ham in the past year or so and it's unbelievable.

I'm told La Quercia is good as well, from Iowa, but want to try it in a deli or restaurant before I go whole hog, pun intended.

If you're ever in the Lake George area, Oscar's Smokehouse in Warrensburg has the stuff in Bacon. Hickory and Apple wood smoke versions, truly great and not that expensive. Get the thick cut.

I think they do mail order too.

I knew that was Benton's Bacon in the photo before clicking the link or checking the photo tag. Very distinctive looking bacon.

Benton's is the best. It's beyond bacon. Got 10 lbs as a Christmas gift last year. I still have 3 lbs left in the fridge. It's ridiculous.

I first heard of it from a speakeasy joint down on St. Marks Place called PDT (Please Don't Tell). They made/make an Benton's old-fashioned with bacon-infused bourbon. It's crazy good. I've used Benton's several times now to infuse different whiskeys. And I've tried other bacon too, but the smokiness of Benton's is incomparable.
