I don't know where it originated, but I can tell you two things. First, "Scarpariello" means shoemaker. And second, I have never seen either dish in Italy (and I have eaten a whole lot of food in Italy), but I have seen the chicken one in Italian restaurants in Rhode Island.

Curious. I've seen chicken Scarpariello and now papparedelle Scarpariello... and the Torre Scarpariello, outside Amalfi, is where the missus and I honeymooned.

Does anyone more familiar with things Italian know where the term's culinary use originates? Google ain't helping.
