But, not for Thanksgiving. I can just imagine telling my in-laws, "Oh, if you don't mind, let's skip the mashed this year and I'll do this chi-chi New York thing with the potatoes instead."

Oy.

Yeah some people are super uptight about their Thanksgiving meals. I remember once about 10 years ago going to Artie's Deli with a friend and 2 of his friends. Emily was working and I was a free agent that day. So I got together with these 3 guys, none of whom were from New York, and they all ordered the Thanksgiving special. I ordered a Pastrami sandwich. One of the guys was outraged. "You can't order that on Thanksgiving," he said.

"Sure I can," I said. I did and it was good.

Tradition is cool but sometimes tradition can go fuck itself.
