Food 52 gives coffee-crusted barbecue beef ribs.

Sounds odd, but I’d try ’em. Why the hell not?

Take everything you'd expect a low-and-slow, wood smoke and rub purist to say, then imagine I already said it. There, spared you all.

But even without my suspicion of the oven as a place to cook ribs, that recipe has them in there a looong time all the way up at 300. And the "after" photo looks about as nuked as I'd expect them to look from that maltreatment. (I know that color is coffee, not burnt meat. But still.)

Beef ribs dry out if you look at them funny.

My favorite beef ribs recipe?

1. Prepare 10lb. horseradish/rosemary/garlic crusted prime rib roast.
2. Remove the rack of bones from the roast.
3. Reserve discarded portion for later use.
4. Separate bones and enjoy.
